Barbecue Sauce (1 PP per Tablespoon)

Sweet & Spicy BBQ Sauce
3/4 cup firmly packed brown sugar
1/2 cup tomato ketchup
1/3 cup molasses
1/4 cup cider vinegar
1/4 cup olive oil
3 tablespoons prepared mustard
3 cloves garlic, minced
2 teaspoons Worcestershire sauce
1/2 teaspoon salt
1/2 teaspoon cayenne pepper
1/4 tablespoon ground black pepper
  1. Combine sugar, ketchup, molasses, vinegar, olive oil, mustard, garlic, Worcestershire sauce, salt, cayenne pepper and black pepper in blender; cover. Blend until smooth. Refrigerate until ready to use.

Makes 2 cups.

Marshmallow Fudge (1 point, 1 Point Plus per piece)


Ingredients

  • 1-1/3 cups HERSHEY’®S Semi-Sweet Chocolate Chips
  • 2/3 cup fat-free sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1-1/3 cups miniature marshmallows
  • 2 whole reduced-fat graham crackers, broken into bite-size pieces

Directions

  • Line an 8-in. square pan with foil and coat with cooking spray; set aside. In a heavy saucepan over low heat, melt chocolate chips with milk; stir until smooth. Remove from the heat; cool for 2 minutes. Stir in vanilla. Fold in the marshmallows and graham crackers.
  • Pour into prepared pan. Refrigerate for 1 hour or until firm. Lift out the pan and remove foil; cut into 48 pieces. Yield: 4 dozen.


Nutrition Facts: 1 piece equals 41 calories, 1 g fat (1 g saturated fat), 0.55 mg cholesterol, 10 mg sodium, 7 g carbohydrate, 0.55 g fiber, 1 g protein.

Broccoli and Carrots with Toasted Almonds (1 Point, 1 Points Plus)

Ingredients

1/3 cup sliced almonds
1 pound Carrot sliced
1 (12-ounce) bag broccoli florets (about 6 cups)
1 tablespoon butter
1/4 cup finely chopped shallots
1/2 cup Chicken broth fat free, sodium free
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper

Instructions
Preheat oven to 350°. Spread almonds in a single layer in a shallow pan. Bake at 350° for 7 minutes or until lightly browned and fragrant, stirring occasionally. Cool completely, and set aside. Place carrots in a large saucepan of boiling water; cook 3 minutes. Remove with a slotted spoon. Plunge into ice water, and drain. Place broccoli in boiling water; cook 2 minutes. Drain and plunge into ice water; drain. Melt the butter in a 12-inch nonstick skillet over medium-high heat. Add the shallots; sauté 2 minutes or until tender. Reduce heat to medium. Add carrots, broccoli, Homemade Turkey Stock, salt, and pepper; cover and cook 6 minutes or until carrots and broccoli are crisp-tender. Sprinkle with almonds. Serve immediately.

Italian Carrots (3 Points, 1 Point Plus)

(4 servings) Ingredients

2 2/3 cups baby Carrots
1 1/3 teaspoon Olive oil
2/3 teaspoon Dried basil
1/3 teaspoon Dried oregano
1 1/3 teaspoon Butter


Instructions

Cook carrots in butter until tender/crisp. Drain carrots and toss with olive oil, basil, and oregano.
